Spring Rolls You'll Fall For
Ingredients (makes one serving):
2 whole wedges of The Laughing Cow®
Light Creamy Swiss
1 whole multi-grain soft tortilla
6 leaves basil
6 sprigs cilantro
4 slices each julienned red bell pepper,
yellow bell pepper, cucumber and carrot
1 whole scallion, trimmed and
1/4 whole medium avocado, sliced
1/4 cup pea shoots
Spread cheese wedges on one side of soft wrap. Cover the surface of The Laughing Cow® cheese with basil leaves, leaving an inch at one end uncovered. Position the wrap in front of you so the small area without basil is at the top. (The exposed part of the wrap with just the cheese will help keep the spring roll secure when rolled.)
To assemble, approximately 1/4 from the bottom of the wrap, arrange cilantro sprigs horizontally along the width of the wrap with about 1/2 inch hanging off each side. Repeat this step with remaining ingredients: red & yellow bell pepper, cucumber, carrot, scallion, avocado & pea shoots.
Take your time when rolling. A tight roll will look (and inevitably taste) the best...but rolling too tight may tear the tortilla, causing veggies to shoot out the sides! Slice into 1-inch pieces and serve.
